








Organic Spanish Tortilla with Haloumi and Kasundi (Vegetarian)
This week we are touching different cultures in one dinner. I am making an organic potato tortilla, which is a Spanish version of what we might more commonly call a frittata. This tortilla has caramelized red onions, spinach cilantro, lime zest and fennel seeds. It is accompanied by a tomato 'kasundi', which is a bright Indian tomato relish. To finish the plate I grilled some fresh halloumi (Cyprus) and pair it with a radicchio salad with pomegranate balsamic dressing from Lively Olive Tasting Bar on Winslow. Eggs are sourced from Heyday/Winney Farm.
If you have left over tomato relish, you can put it on everything. I love it on toast, a fried egg, rice or just eat it out of the jar!
