








Farotto with roasted spring vegetables
Italians are well known for their risotto with arborio or carnaroli rice, but over the past couple of years I have begun to really love my risotto with farro, which gives a bit more ‘bite’ to the dish. And you know what, sources report that the Italians seem to have accepted the farotto variant :)
This week’s Spring Farotto will include parmesan cheese and fresh fava beans. On top we’ll feature roasted spring vegetables including asparagus, spring onions, and shaved fennel, depending what is fresh and looking good.
On the side, we’ve got a crunchy spring slaw with sugar snap peas, cabbage, celery, pumpkin seeds, fresh parsley, and a hit of lime zest. Super fresh, super seasonal.
